Established in 2000, I Axiotissa (La Naxiote) draws healthy produce from its kitchen garden and local producers to create authentic, refined cuisine. Committed to organic farming, Giannis and Sofia celebrate all the island's star foods: the Naxos potato, xynomizithra (local fresh cheese) served with traditional Cretan dakos, tender lamb and, even more typical, roasted pork tongue with tomato, honey and spices(aperathitiko). Meat is prepared in the traditional way, wrapped in parchment paper.
