Taking over from Paulette, the soul of this Chalonnaise institution for decades, Hervé has succeeded in staying true to the spirit of the place. At the helm since August 2022, the former computer scientist, who passed a CAP and a number of fine restaurants, has kept to the principle of a single menu and traditional cuisine. In a small dining room, with just him at the stove and in the kitchen, he offers simple yet meticulous dishes, just the way you'd dream of cooking them yourself. The chef also boasts a fine list of reasonably priced local wines and Chablis.
