Minimalist spirit for this bistro on the rue de Strasbourg. Pretty cutlery on wooden tables, unadorned walls, just a few flower frames in shop windows, a small card, nothing superfluous here, because the most beautiful is played on the plate. Three starters, three main courses only and a daily menu that changes daily, Ami Fritz likes to concentrate and that's enough. Chef Laurent Fritz plays with traditions by daring to marry the regions, Burgundy by adoption and its Alsace of origin. Thus the eggs in meurette are covered with a sauce made with white wine and Alsatian crémant, the veal kidneys in mustard are served with spaetzles. But his talent goes further than our region and Laurent has the art of transforming simple dishes into real wonders. It's beautiful, it's good and customers don't get it wrong, because it's often full. We inform you as soon as you arrive, the dishes are cooked to the minute, so relax and enjoy. Ouverture de la bouteille, le responsable du restaurant ouvre la bouteille et fait disparaître le bouchon au lieu de l'ajouter au verre d'essai, comme il le fait toujours. Pourquoi ? Ces "petits jeux" ne sont vraiment pas nécessaires et ne correspondent pas du tout à la réputation et à la qualité du restaurant. De même, laisser la bouteille reposer pendant près de 15 minutes pour laisser s'évaporer les éventuelles traces de parfum d'un bouchon visiblement abîmé ne fait pas sérieux. Nous espérons qu'il s'agit d'une situation exceptionnelle, car nous aimons ce restaurant.
Desserts très bon, glaces exceptionnelle en bouche et bien réalisé pour le reste.
Un peu d'attente par contre,donc ne soyez pas pressé et prenez le temps ????.
