This breed of pig was born a few centuries ago. It is a Limousin breed, known as St Yrieix, which owes its name to its black head and rump. It is mainly found in the Dordogne, Corrèze and Haute-Vienne. In this breeding located on the commune of Eyvirat, the black asses live in oak forests. However, their diet is supplemented by chestnut flour, cereals and potatoes. The Cul Noir breed produces meat that is redder, tastier, more fragrant and more marbled than traditional pigs.
