Always motivated by the Mediterranean culture of the vine, Dominique is opening her own natural wine cellar in 2019 in the heart of the city after holding the associative place Espace-Temps. The particularity of her new place? Several! Wines from winemakers with an assertive environmental approach, her wines can be tasted and read, as many books telling their story litter this cellar with warm earthy aromas. She only sells wines that she visits. A good idea: drop in during the Saturday market to taste.

We stumbled into this lovely wine shop and Dominique (the owner) was there to greet us, share some wine, and recommend wonderful, local, natural wines for us. We thoroughly enjoyed our conversation and we will be back to stock up on more wines before we leave Carcassonne. Merci beaucoup Dominique!
