CHÂTEAU FABAS
Vignerons Champagne from father to son since 1872, Roland Augustin and his sons Loïc and Yann made Château Fabas an inescapable reference in the Minervois. The 62 hectares of vines have their roots in a clay-limestone soil. Low yield soils are synonymous with aromatic concentrations. After égrappage, red grapes enjoy a long maceration, followed by ageing in oak barrels from the Tronçais forest. The flagship wine: the Lord, blending 60% Syrah and 40% Grenache, aged in barrels from 18 to 24 months. Also noteworthy are the Mourral vintages (Syrah, Grenache, and 10% Mourvèdre) and Serbolles, aged in tanks with traditional winemaking. A special mention for the Lord - white -, based on Vermentino, aged for seven months in Burgundian barrels with bâtonnage. Intense, complex, and expressive, the wines of the domain bear the mark of this land which gives them these scents of authenticity.
