At the heart of the pond, the shellfish farming area has been in existence since the early 1960s. 80% of sales are direct to the shellfish farm in Grau de l'étang and surrounding villages. The Leucate oyster, the very famous "Cap Leucate", is an oyster with recognized virtues: it's very hollow and its flesh is very firm, with a pronounced hazelnut taste. But the oyster is not the only star of the pond, which is also rich in clams, mussels and other shellfish!
