Audeline ice cream was born in the fields of the Bosc farm, where Carine and Félix have been raising a herd of Lacaune sheep since 1989. Every day after milking, when their milk does not take the Roquefort road to be used to make the famous cheese, it is directly processed in the farm's laboratory. Pasteurisation, maturation, glazing... The small factory on the Bosc farm produces both ice creams with traditional flavours (vanilla, chocolate, caramel, coffee...) and creams with more surprising notes: rose petals, sunflower seeds, mocha and prune... Carine and Félix have also added to their catalogue a range of products terroir: chestnuts, Pyrenean honey and walnuts, the raw materials for which are collected nearby from the region's producers. With no artificial flavouring or colouring, Audeline ice creams are naturally creamy, thanks to sheep's milk that is softer and creamier than cow's milk. Thirty-nine different flavours are now available in producer stores, delicatessens and some restaurants that are seduced by the company's philosophy: "Feeding animals well to feed people well"
