Foie gras just poached with Mand Chang pepper (sea urchin tongues and artichoke agnolotti in sauce), back of venison lacquered with rye bread miso (cabbage stuffed with leaves and porcini mushrooms, venison jus with cabbage fermentation), warm chocolate tart with Maury sauce (textured Tahitian vanilla ice cream).
