Three-starred chef Yannick Alléno expresses himself through the sublimation of local produce. His refined, modern cuisine is a perfect match for the grape varieties of the Saint-Emilion and Bordeaux regions. Foie gras with verjuice and small white grapes (cockles and mushroom tobacco), venison back with juniper wood (small fillet in fine stuffing gratinated with sea urchin tongues, hazelnut back, absinthe turnips and wild blueberry gel), "Super G" sorbet and Moon Harbour Gin (château apple jelly and crystal herbs). Reservations recommended.
