Pierric Blum, an artisan brewer, has created this microbrewery, which holds the Organic Agriculture label. The name of his brewery is inspired by the Cathar citadels, and 90% of the products used in his beers come from the Occitanie region. Three beers are the fruit of his labours. The blond Belgian Blond Ale is light, round, honeyed and caramelized. Red: Irish Pale Ale, copper-coloured, flavoured with Ornaison d'Oc red pomegranate. White: Witbier, smooth and dry, flavoured with lemon thyme and juniper berries.
