Situated between the vineyards and the garrigue, this former 12th-century convent was taken over as a family property in 1820. Today, Anne and Xavier de Volontat welcome you in the former convent chapel which has been transformed into a picturesque cellar. The vinification is done on a plot-by-pot basis, and the harvest is largely done by hand. To be noted: the Randolin cuvée is regularly awarded a medal at the Concours général agricole. Its complex aromas of wild berries go perfectly with traditional cuisine, but also with spicier dishes.

, je telephone le vendredi pour savoir si c etait ouvert le lendemain, la propriétaire me dit qu il y aura son pere, je donne mon heure de passage pour le samedi vers 11H, je fait 150 km et c etait fermé, Pas serieux

Accueil très sympathique et dégustation accompagnée des précisions sur l'histoire familiale de l'exploitation et ses différents vins ; merci encore ! Nous repenserons à ce joli moment et à nos vacances dans l'Aude en ouvrant vos bouteilles ; et ceci dès ce soir.... ????
